We only work with suppliers who share our passion for creating truly exceptional food. We work closely with our farmers and suppliers to source fresh and sustainable ingredients directly, without the middle men. We are proud to have built these relationships over years of working together, and look forward to sharing these fantastic ingredients with you and your guests.

 

 

Meat - The Ginger Pig

The Ginger Pig began over 20 years ago, with a near-derelict farmhouse and three Tamworth pigs. After farming their own pasture and North Yorkshire moorlands for two decades, the group left the farm behind and now works with a small network of like-minded farmers to supply their eight London butchers’ shops, their wholesale clients and online Chop Shop.

At the heart of everything The Ginger Pig do is good animal husbandry and welfare; livestock that is looked after well in the field will simply taste better on the plate.

THE DUSTY KNUCKLE BAKERY

The Dusty Knuckle is a bakery and café located in London’s Dalston and Harringay neighbourhoods and happens to be a close neighbour to our kitchen. They are a purpose driven business: they use their busy operation to help at-risk youth take forward steps in their lives through on-the-job training and mentorship.

 

 

Line-Caught Day Boat Fish - Flying Fish

When it comes to fish, nowhere is a patch on Cornwall.

We’re so lucky to have the richest and most varied fish and shellfish stocks in the UK, if not the world, here.

But as you know, fish is only as good as it is fresh. So day after day, night after night, week after week, the amazing team at Flying Fish use their specialist local knowledge, skill and hard graft to bring beautiful fish from the ship to our kitchen in 48 hours, or less.

Clive Thornicroft has been supplying our MD Mark with the finest produce for fifteen years in various restaurants and food operations - they have literally grown together through the food industry.

Clive is passionate about sourcing the finest quality ingredients with a focus on UK seasonal produce.

Italian Artisan Cheese & Charcuterie - Gastronomica Borough Market

Gastronomica was founded in 2000 by Italian entrepreneur and food lover Marco Vineis who has a passion for supporting and promoting small artisan food producers, particularly from his unspoilt home region Piedmont.

This passion took him away from a corporate career and led to the opening of Gastronomica in Borough Market, where the Gastronomica team have created a fantastic destination for their unique products and famous Panini and Piadina.

Marco’s passion has not been lost on countless chefs who have refined their Italian offerings through his knowledge; he is also pretty well known for his own culinary skills.
