Creating the menu for this Cuban themed wedding celebration was seriously fun. We focused on punchy flavours, vibrant dressings and marinades, and the very best quality ingredients. Combined with the venue’s mind-blowing transformation, the guests were fully transported to Cuba for the night.

On arrival, guests were welcomed with canapés and smoked pineapple daiquiris, served by the talented Drinks Fusion team, lining the bar tops. As the club came alive with music and 250 guests filled the space, six food stations tucked into the alcoves served an array of small plates and bowls. Our chefs worked busily, plating to order and keeping the energy high as the party rolled on.

Later in the evening, desserts were circulated alongside a paired cocktail, and to close out the night, grilled toasted sandwiches were served as the perfect drunken comfort food.
