Bringing Cuba to London

Creating the menu for this Cuban themed wedding celebration was seriously fun. We focused on punchy flavours, colourful dressings or marinades and the very best quality raw ingredients. Combined with the mind blowing transformation of the venue, the guests were fully transported to Cuba for the night.

Guests were served canapes on arrival, with smoked pineapple daiquiris by the Drinks Fusion team, lining the bar tops. As the club came to life music filled the space along with the 250 guests, the six food stations positioned in the alcoves filled with small bowls and plates and our chefs busily plated up and served to order as the party continued.

Desserts were circulated with a paired cocktail and grilled toasted sandwiches were offered as drunken comforts towards the end of the night.

    Bluefin tuna ceviche, lime, red chilli & toasted sesame

    Aged beef slider, shoestring fries, smoky mayo & pickled red onions

  • Corn Tacos
    Lechon - slow cooked chipotle pork & pickled red onion, pico de gallo
    Vegan taco – crispy aubergine, avocado & smoky dressing, pico de gallo (vegan)

  • Mariscos – Seafood Stall
    Oysters
    Gillardeau rock oyster with shallots & chardonnay vinegar
    Half will be dressed with shallots & chardonnay vinegar & half undressed
    Steamed king crab, yuzu mayo & cucumber
    Lobster salad, wasabi tobiko & shellfish vinaigrette  (more of a kick to the dressing & less creamy)
    Peeled crevettes, lime & mango salsa
    Shave fennel salad, pickled peppers & jalapeno dressing (vegan)

  • Verduras – Vegetable Garden

    Ensalada de zanahoria - slow roast carrots, jalapeno vinaigrette & toasted spices (vegan)

    Ensalada de escarole - endive, baby gem, radish & citrus, lime chilli vinaigrette (vegan)

    Ensalada de repollo - char grilled cabbage, chilli salsa, spring onion & coriander (vegan)

    Ensalada de maiz - corn salad, red chilli, lime, mint & pickled red peppers (vegan) (more lime to give more acidity)

    Ensalada de raíz de remolacha - marinated beetroot, horseradish (vegetarian)
